Mango avocado salad

 

The tropical flavours from the mangos paired with the smooth texture of the avocados make this salad a perfect side dish. This recipe also contains monounsaturated fats from the olive oil, which can help lower cholesterol.

Ingredients

Directions

  1. Step 1

    Wash hands with soap and warm water for at least 20 seconds. Wash and dry all surfaces and equipment used for food preparation.
  2. Step 2

    Rinse cucumber and cilantro under cool running water.
  3. Step 3

    Peel and cube the mangoes, discarding the pits. Halve the avocado lengthwise, remove and discard the pit and skin, then cube. Peel and chop red onion, and chop cucumber into medium cubes.
  4. Step 4

    Combine mango, avocado, red onion and cucumber in a large mixing bowl.
  5. Step 5

    Chop fresh cilantro and place in a small bowl.
  6. Step 6

    Whisk together olive oil, lime juice, honey, cumin, chili powder and black pepper in a small mixing bowl.
  7. Step 7

    Pour the dressing over the salad and toss gently to combine.
  8. Step 8

    Top with a sprinkle of fresh cilantro and enjoy.
  9. Step 9

    Refrigerate all leftovers.
