Ackee and spaghetti

 

The bright flavours of the coconut milk and ackee makes this recipe a perfect choice for dinner. This recipe also features whole grain spaghetti, which is a great way to get fibre into your diet.

Ingredients

Directions

  1. Step 1

    Wash hands with soap and warm water for at least 20 seconds. Wash and dry all surfaces and equipment used for food preparation.
  2. Step 2

    Rinse the parsley and cherry tomatoes under cool running water before preparing the ingredients.
  3. Step 3

    Cook the spaghetti in a large pot of boiling water according to package directions. Drain well and set aside.
  4. Step 4

    Heat oil in a shallow pan over medium heat. Add onion and cook until softened. Add garlic and chili flakes. Cook for 1 to 2 minutes.
  5. Step 5

    Add cherry tomatoes and tomato purée to the pan. Sauté for 10 minutes or until the tomatoes begin to break down.
  6. Step 6

    Add cooked spaghetti, chopped parsley and coconut milk to the pan and mix well.
  7. Step 7

    Gently fold in drained ackee and leave on a low heat for 5 minutes. Season with black pepper to taste.
  8. Step 8

    Refrigerate all leftovers within 2 hours in small portions, using multiple shallow containers so they cool quickly.
