Lunch salad with avocado jalapeño dressing

Creamy avocado and slightly spicy jalapeño kick up this easy lunch time salad.
Lunch Salad with Avocado Jalapeno Dressing

  • 1 small avocado, chopped
  • 1 tbsp (15 mL) drained pickled jalapeno pepper slices, finely chopped
  • 1 tbsp (15 mL) chopped fresh cilantro
  • 1 tbsp (15 mL) cider vinegar or pickled jalapeno pepper juice
  • 4 cups (1 L) chopped romaine lettuce
  • 4 thin slices cooked turkey breast (about 4 oz/125 g)
  • 1 vine ripened tomatoes, cut into wedges
  • Sliced cucumber (optional)
  1. In a small bowl, mash avocado with fork until smooth. Stir in jalapeño peppers and cilantro. Add vinegar until combined; set aside.
  2. In a large bowl, toss romaine lettuce with avocado dressing to coat. Divide among 2 dinner plates. Top each salad with turkey and tomatoes. Add cucumbers if desired.
