Lentil skewers with tahini sauce
These skewers can also be enjoyed as an appetizer, so make 16 smaller skewers and serve them up with the sauce to dip into
Step 1Heat oil in a nonstick skillet over medium low heat. Cook shallot, garlic, curry powder, cumin and coriander for 2 minutes. Remove from heat.
Step 2Mash lentils until smooth. Stir in shallot mixture, cilantro and egg until combined. Stir in breadcrumbs. Divide into 8 oval shapes onto soaked skewers. Spray lightly with cooking spray.
Step 3Place skewers in grill pan set over medium-high heat for about 5 minutes, turning once or until heated through and grilled marked.
Step 4Place onto salad greens and drizzle with tahini sauce.
Tahini sauce: Whisk together tahini and water until smooth. Whisk in lemon juice, garlic and mint; set aside.
