Ingredients

Salad:

  • 1 cup (250 mL) wheat berries
  • 3 cups (750 mL) water
  • 1 cup (250 mL) finely chopped celery
  • 2 cups (500 mL) finely chopped apple, preferably Cortland or Jonagold (skin on)
  • 1/2 cup (125 mL) finely chopped fresh mint
  • 1/2 cup (125 mL) finely chopped green onion

Dressing:

  • 2 tbsp (25 mL) canola oil
  • 3 tbsp (45 mL) apple cider vinegar
  • 2 tbsp (25 mL) apple juice
  • 1 tbsp (15 mL) honey
  • 2 tsp (10 mL) finely minced fresh ginger
Directions
  1. Place wheat berries in small saucepan, add 3 cups (750 mL) water. Bring to a boil and then reduce heat and simmer for about 45-55 minutes or until tender. Drain any excess water and place wheat berries in large mixing bowl.
  2. Add celery, apples, mint and green onion and stir to combine.
  3. In small bowl, whisk canola oil, vinegar, apple juice, honey and ginger together. Pour over salad. Flavours improve if salad is refrigerated for up to 4 hours prior to serving.
