This colourful salad adds a special touch to a Valentine’s Day dinner

Ingredients
  • 1 head red leaf lettuce, rinsed, patted dry
  • 1 head radicchio lettuce 1 OR
  • 1 cup (250 mL) finely shredded red cabbage
  • 1 cup (250 mL) frozen, lightly sweetened raspberries, thawed and drained
  • 1/2 small red onion, cut into thin rings

Vinaigrette:

  • 3 tbsp (45 mL) juice from raspberry
  • 2 tbsp (25 mL) canola oil
  • 2 tbsp (25 mL) raspberry vinegar
  • 1 tsp (5 mL) granulated sugar
Directions
  1. In a large bowl, tear lettuce and radicchio into bite-sized pieces. Toss in raspberries and onion.
  2. To prepare vinaigrette: combine raspberry juice, canola oil, vinegar and sugar in a container with a tight fitting lid. Shake until sugar dissolves.
  3. Drizzle vinaigrette over salad and toss. Serve immediately
