Mocha fruit bircher muesli

Bircher muesli has been a go-to breakfast for generations. But if oats soaked overnight doesn’t sound like your culinary style, try this modern twist including cocoa nibs for a tasty start to your day.

Ingredients
  • 3/4 cup (175 mL) large flake rolled oats
  • 1/4 cup (50 mL) oat bran
  • 2 tbsp (25 mL) each sliced almonds and sunflower seeds
  • 2 tbsp (25 mL) ground flax
  • 1 tbsp (15 mL) each cocoa nibs and unsweetened cocoa powder
  • 1/2 tsp (2 mL) each ground cinnamon and instant coffee (optional)
  • 1 apple, cored and grated
  • 2/3 cup (150 mL) 0% plain Greek yogurt
  • 2 cups (500 mL) mixed fruit such as sliced banana, fresh or frozen blueberries, strawberries and pomegranate seeds
  • 1 cup (250 mL) skim milk (optional)
Directions
  1. In a bowl, stir together oats, oat bran, almonds, sunflower seeds, flax, cocoa nibs and powder, cinnamon and instant coffee, if using. Add apple and yogurt and stir until well combined (mixture will be thick). Cover and refrigerate overnight.
  2. In the morning, stir the muesli and divide among 4 bowls. Top each with fruit and drizzle with milk if desired before enjoying.
